Mango & Macadamia Mini Ice Cream Cakes

November 27, 2020 by Salma 2 Comments

Mango & Macadamia Mini Ice Cream Cakes | The Polka Dotter

These darling mini ice cream cakes are heavenly on a sultry summer day. Inspired by the iconic Weis bar, these delightful frozen treats celebrate the marriage of fresh Australian ingredients – the beloved mango and crunchy macadamias. Mango lime sorbet is layered atop vanilla ice cream dotted with honey roasted macadamias and a hint of ginger, and finished off with a crisp nutty base and a sprinkling of coconut. These icy delights may look impressive in all their sophisticated layered glory, yet they come together pretty quickly, making them an easy dessert for your next summer feast.

This sponsored post was created to showcase my favourite fresh seasonal produce from Harris Farm Markets, especially the exceptional Kensington Pride mangoes used to create this divine recipe.

Ingredients

Scale

Mango Lime Sorbet

  • 2 ripe mangoes
  • 1 lime
  • 75g caster sugar
  • Pinch of fine sea salt

Honey Roasted Macadamia Ice Cream

  • 500mL vanilla ice cream, slightly softened
  • 80g raw macadamias, chopped finely
  • 1 tbsp honey
  • ½ tsp ground ginger
  • Pinch of fine sea salt

Macadamia Crust

  • 150g digestive biscuits
  • 50g unsalted butter, melted

To Serve

  • Desiccated coconut, to sprinkle
  • Edible flowers (violas), if desired

Instructions

Mango Lime Sorbet

  1. Preheat oven to 200°C (180°C fan-forced) and set aside a 12-hole muffin or cupcake pan as a mould for the mini ice cream cakes. Using a silicone-based muffin pan ensures easy removal of ice cream cakes when frozen.
  2. Peel mangoes and cut into cubes, discarding peel and seed, yielding 350-400g mango flesh. Place mango in food processer with juice of 1 lime, sugar, and salt and blitz to a smooth puree.
  3. Divide evenly between muffin pan holes and ensure a smooth surface. Place in freezer to set.

Honey Roasted Macadamia Ice Cream

  1. Place chopped macadamias in a bowl with honey, ground ginger and salt and stir to ensure all nuts are well coated.
  2. Spread nuts in a thin layer on a baking tray then roast in preheated oven for 5-10 minutes until golden and fragrant. Remove from oven and allow to cool completely.
  3. Mix 50g of the honey roasted macadamias with softened vanilla ice cream then divide ice cream between muffin pan holes and ensure a smooth surface. Ensure the mango lime sorbet has firmed up enough before placing the ice cream on top to preserve the neat layers.
  4. Return muffin pan to freezer to continue to set.

Macadamia Crust

  1. Finely process biscuits with remaining 30g of honey roasted macadamias in a food processer, then mix together with melted butter in a medium bowl.
  2. Divide biscuit crumbs between muffin pan holes, pressing firmly with a spoon or base of a glass to create a smooth flat crust. Again, ensure the ice cream has firmed up before pressing the macadamia crust over it, to preserve the neat layers.
  3. Return muffin pan to freezer to set completely, ideally for 4-6 hours or overnight.

To Serve

  1. Use a pallete knife to loosen the edges of the mini ice cream cakes, then pop each cake out of the silicone bases and place on individual serving plates.
  2. Sprinkle with desiccated coconut and decorate with edible flowers if desired. Serve immediately.

Enjoy!

Baking Notes
1. Use fresh, good quality, local produce for best results. Kensington Pride, Calypso or Honey Gold mangoes that are ripe and juicy at the peak of the season will make for the most delicious desserts, while sourcing a single origin or local honey will impart a lovely unique flavour.
2. Use a silicone muffin pan for this recipe to ensure easy removal of the individual cakes.

Love this quiet scene at Pappa Sven. It was actually a test shot of the lighting, my first shot of the day. The lovely Libby had handed me a bud vase filled with a casual spray of flowers picked from one of Pappa Sven’s flower pots, and I had set out a few unfrosted coconut cupcakes on a her lovely cake stand, getting them ready to glam up with roasted strawberry icing.

I never usually care too much for my test shots, they are what they are, and I often prefer my last shots of a session, when the cakes are cut, the crumbs are scattered and the drizzles have dripped in their imperfectly perfect ways. And I’ve had a sneaky chance to indulge in whatever dessert I have prepared, all in the name of good photography and recipe testing.

But it’s true what they say, there’s a first time for everything, and this photo may actually be my favourite of the whole shoot, a genuine moment of calm in such a cosy space.

And if I had it my way - I’d share the full un-cropped version with you, that included the beautiful detail of the brick wall across the top of the window, but as Instagram would have it, we are obliged to a 4:5 ratio, so alas today this crop will suffice.

Also I am absolutely elated and humbled that the tickets to this event are selling so quickly. Thank you to those of you who have already purchased a ticket, it truly means a lot to have you share this event with us 💕

Good spring morning 💕 aren’t these blooms abs Good spring morning 💕 aren’t these blooms absolutely stunning?

Instagram usually has a strong dislike for my floral photography. I suspect they are too much of a departure from cakes and cookies, and it’s considered they may offend my dessert-loving audience 😂

What do you think? Do you like the occasional flower or two to start your day?

Blood orange season has arrived, gently floating i Blood orange season has arrived, gently floating in with the soft spring breezes. It’s always one of my favourite times of the year.

Last year’s signature blood orange cake was this delicately striped Blood Orange + Earl Grey Bundt Cake, a crowd favourite that you can find on the blog.

(Along with the other twelve blood orange recipes. Yes, I just checked and would you believe there are no less than specifically THIRTEEN blood orange recipes. And I still think there’s room for number fourteen 😂).

What’s your favourite flavour to pair with blood oranges? And are there any blood orange recipes you’d like to see this year?

The magnolias are in full bloom again. It’s alw The magnolias are in full bloom again.

It’s always such a glorious sight to witness. Last year I shared the special story behind our magnolia tree, and I can’t help but share it again after I’ve spent the better part of the last week admiring her brilliant beauty.

The first time she flowered a few years ago, we were completely in awe. We had moved into our home in the middle of a scorching summer drought, and always wondered about this sickly tree that commanded prime position in the front yard.

So imagine our surprise when nine months after living in our home, this bare thin tired tree gave rise to the most stunning, enormous magenta magnolias.

Every year that has followed we eagerly await the first week of August to indulge in her beauty. Her fuzzy winter coats are shed and give way to the most brilliant shade of deep pink splashed against the fresh greenery of the garden.

Such a special way to welcome in the warmer weather 💕
